Marina was born and raised on a ranch in Kamloops, British Columbia. At 19, Marina left home and traveled in Europe for a year before attending university at UBC. After completing a Bachelor of Science in Agriculture, Marina got a job as a ranch agrologist in Prince George where she worked for 7 years. Marina left the Forest Services to start a family with her husband and together they raised three very active boys. Marina’s very active boys inspired the cookie recipe that Marina and her girlfriend came up with, “the perfect cookie recipe.” These delicious and healthy cookies have fuelled Marina’s boys through many sports games and other activities. Marina’s sons are adults now and it is still a delight for Marina to whip up a batch or two when she knows her boys are coming home for a visit.
Marina’s Peanut Butter Oatmeal Chocolate Chip Recipe
1 cup butter
1/2 cup granulated sugar
1 cup firmly packed light brown sugar
1 cup smooth peanut butter
2 large eggs
2 teaspoons vanilla extract
2 tablespoons milk
2 cups quick cooking rolled oats
2 1/2 cups all purpose flour
1 teaspoon baking soda
12 ounces semisweet chocolate chips
- Preheat oven to 350 degrees. With mixer, cream butters and sugars well until smooth. Then add eggs, milk, vanilla, scraping down sides of bowl as needed.
- In another medium bowl, whisk together oats, flour, and baking soda. Add to butter mixture and mix on low until well incorporated. Stir in chocolate chips with a wooden spoon.
- Drop dough by tablespoons onto ungreased baking sheets. Bake 10-12 minutes,switching position of pans halfway through baking, or until browned but still soft in the centre. Transfer cookie to racks to cool. Enjoy
