Curt’s grandmother’s Peanut Butter Cookies


Curt Knippelberg was born and raised in the Cowichan Valley. He spent the first part of his childhood in the close knit community of Lake Cowichan. Curt had a wonderful childhood and was very busy with sports throughout his school years. He loved all sports, but especially loved boxing and wrestling. Curt is currently studying at Vancouver Island University and will enter the Education Program once he completes the prerequisite courses. The recipe that Curt has shared is his Grandma’s Peanut Butter Cookie recipe. His grandmother baked a lot especially around holidays, like Christmas, and the smell of these delicious cookies would bring her grandchildren to the kitchen. These cookies are quick, fun and easy to make.

Curt’s granny’s Chocolate Chip Cookies

1 cup shortening

¾ cup white sugar

¾ brown sugar

2 eggs

2 tsp vanilla

2 cups flour

1tsp baking soda

½ tsp salt

1 pkg. chocolate chips

½ cup walnuts


Bake at 350 degrees for 10-12 minutes
